Neither would I, however we do happen to have a local butcher who kills his own, and we don't have a Woolworths outlet.

Do you get to livestock sales very often?

Butchers are mostly notable by their absence, though there are the very odd exceptions. Most buy their meat directly from the abattoirs, same as a lot of the supermarkets do. The exception is Woolworths, whose on farm contracts are among the most sought after in the business (where I live at least).

I also happen to live in a place which probably has one of the very few private dissolutionhouses (read owned by a butcher) left in existence. Even so he probably accounts for less than 0.1% of the sale offerings in local trade type cattle (as distinct from export and manufacturing clbuttes). He doesn't even try to compete in the premium market, where most of the business is done on farm.

No doubt he's also among the last of a dying a breed. Ours still has his own smokehouse as well -- and come to think of it when I was a kid so did my parents (who weren't even butchers).
