My impression of the process is that as long as you pull your finger out and follow their pretty comprehensive guidelines (we didn't use an agent, no need), and get together more than enough info, then you'll be fine.
So, my advice:
Get as many stat decs as you can. Put in photos with you two and friends, and places you've travelled Lots of tickets for events and places etc.... We had no mortgage or even shared finances. But we did set up a joint account, and its not too late for you to do that either. It can be very useful. What we did was divert the common expenses through it. We had weekly standing orders moving money over from our private accounts to cover food and rent and bills and used that account accordingly. Within 1 to 2 months you've got a healthy looking joint account. All we included in the app was a print out of our account, which appeared to be enough for them anway! Turns out having an account like this is damned useful anyway and we've kept it!
You can always put you both on a car insurance document and get a new certificate sent out. This shows joint responsibilties.
I think they are level headed people. Not everyone has full-on joint accounts or joint finances, even those who are married. Sounds to me like you have a great case...you're engaged and been together 23 months! Just back it up with the facts they ask for and you'll be fine.
