we didnt do half of what you are doing... and we have just got the visa
as far as evidencing goes, we showed a joint credit card, joint bank account, bill with both names on (phone and gas electricity) we still actually have 2 houses and live between them so mortgage evidence etc was not a possibilty (which we thought would be a problem)
we also got list of emails sent to each other and copies of my mobile phone bill to show texts and calls to my g-f.
the main thing we did was collected together a stack of photos sticking them on sheets of A4 2 at a time with a description of when (date) and where the photo's were taken ie holidays etc over the whole period of us being together (which was 2 years in june)
the other thing we provided was things like cards (xmas birthday valentines etc... even mushy ones where she went away for a weekend and stuff like that) you should get them back but they do require the originals.
we didnt do the statutory declarations or get any from relatives etc.
Im sure this is different for each case.. but it does seem like we had a 'fairly easy' ride in
