Ok, here's my standard recipe and although my mom would feed 4 with it, we find with a salad it is great for 2. I can reduce this recipe to any number of eggs you want and post it for you.

Helen's Basic Cheese Souffle'

-= Ingredients =- -MM BY HELEN PEAGRAM- 4 T Margarine or butter 12 c Flour 1-4 c Milk 1 t Salt 1 d White pepper 4 Egg yolks 2 c Vegetables ; meat or fish 1 c Cheese ; grated up to 1 1-2 -cups cheese 4 Egg whites
-= Instructions =- Melt fat a heavy saucepan. Blend in flour and seasonings and gradually add milk. Whisk or stir constantly til mixture thickens. In a separate bowl, beat egg yolks and add the hot mixture to them gradually while stirring constantly. Stir in Veg meat or cheese. When cool, fold in stiffly beaten egg whites. Pour into a large or individual ungreased cbutteroles. Oven poach ( place in large dish with water in it) at 350 for 1 hour for large and 25 minutes for individual souffle's. The souffle' is cooked when a knife inserted comes out clean. SERVE AT ONCE!
