I detest turkey in all forms, so have never been able to choke down a turkey burger. However, I was interested in limiting beef in my diet since I've been on Weight Watchers.
This afternoon I ground equal portions of chicken breast and thigh meat and added a couple of tablespoons of schmaltz for the necessary fat to hold it together. Seasoned the mixture with small amounts of finely chopped onion, Old Bay, and cracked black pepper, then refrigerated it to firm up. Formed patties and grilled 'til done.
Although David likes turkey burgers, he pronounced these infinitely better. I really liked them, too.

i made a mix last night that you could use in a burger .... i used it to fill canneloni tubes but it was a good firm mix that ould be cooked on a grill or on a baking tray in the oven
ingrediants: i used about 500gms (but you can adjust the quantities to suit the number of people, same for the herbs and veges) of minced up chicken 1 large onion finely chopped 1handful each of fresh italian parsley(cilantro) and fresh chives finely chopped 1 to 2 handfuls of finely chopped fresh spinach 2 heaped tsps crushed garlic ground black pepper and salt to season 1tbsp of greek yogurt mix the whole lot together and place in the fridge to firm up a wee bit *about 10-15 mins , take out and get tablespoon size servings or small handfuls(depending on what size you want) and shape in to patties and cook on a hot grill or bake in a hot oven turning once till cooked.... doesnt take long maybe 6 to 8 mins or so
