New pics are here: The follow two pics are referred to the kind of pasta I generally use for carbonara. Its name is "Canalini" (Barilla Brand). I like them very much: And this is the pasta when is mixed with eggs in the hot pan where the pasta boiled. It looks creamy ;)

250 gr of Pasta 2 whole eggs 25 gr Parmigiano reggiano 25 gr Pecorino 2 slices of smoked bacon 4 -5 spoons of EVOO 1 little hot chili pepper. ------------------------------------ While the water is on the fire, take a little frying pan and put inside the oil, the bacon strips and a little piece of hot chili pepper. Cook and roast the bacon. Then turn off the fire. In a dish mix the eggs with cheese till you have a cream. Look the photo: Before the pasta is ready warm the oil with the bacon. When the pasta is ready (1 minute before), drain it and put again in the hot pot where it boiled. Mix the pasta with the eggs and light the fire for half a minute to avoid that the eggs result uncooked (put the fire on minimum otherwise you have hard-boiled eggs and not a cream!). Then add the hot oil with bacon! Mix and serve as soon as possible on table. Have a nice lunch or dinner! Cheers Pandora
