This actually started out as a mistake that our family loves. Years & years ago I tried to make a white sauce with cheese to top the cauliflower but burnt it. I guess I must have been sleeping though Home Ec the day Attilla the Hunn was teaching the cheese sauce. In frustration I grabbed the jar of Cheez Whiz and scooped out as much as I could on top of the cauliflower then put the lid on to keep the cauliflower warm. When I went to serve it the cheez whiz had melted and I was left with a mess but DH loved it. His only comment was if you thicken it up a little it would make a great soup. I've since refined my cooking skills and use a thin white sauce made from half & half with cheddar cheese and just a bit of sharp extra old cheddar to give the soup a little zip. DH loves this soup and it is so easy to make. Every once in awhile he asks me to make it with cheez whiz for old time's sake. It is probably one of the cheapest soups I make too since cauliflower goes for about 80 cents a head. I've used fresh and frozen cauliflower with no problem. This is not a soup that would home can well but I've frozen it with success.
