Chicken & Meringue Desserts


On tonight's menu - Long time comfort food and modified from my earlier newly wed meal of shake & bake chicken, mashed potatoes, corn niblets. Now it's evloved to lightly coated - homemade coating without sugar - baked boneless & skinless breasts with peach chutney, steamed swiss chard, and saffron rice. A late season tomato salad with fresh herbs will be served as well. Here's the pic of the salad & main dish.

DH needed a dessert for a meeting tonight. I made him meringue desserts - 2 dozen. This is a dessert I modified years ago and still works well. These are very easy to make but they do require time because of the long baking & cooling times. The real trick is getting the meringue just right. The centre of the nest should only be big enough for a 1 - 1 1-2 tbsp of filling. They are a great way to use up bits of left over jams or jellies so are quite economical. DH likes them filled with lemon curd or cherry pie filling. A chutney such as peach or mango would work well too. Here's the pics. strawberry, apple, & sweet cherry

Before anyone asks, I'm not sure if you could make these using splenda as I haven't tried. I suspect if you could then used a low sugar or dietetic filling they would be low carb as well.

Mead Cake
That depends very heavily on the mead you get, how its made, what sort of honey is...
