kili, is sounds like you have everything necessary to do some brasied chicken thighs that would taste really awesome. you could brown off the salt and pepper seasoned thighs in sautee pan with the oil of your choice. remove them,(reserving the amount of fat you want) throw in some chopped onion and cook them until most of the moisture is out, add some flour and let that cook for a few minutes to toast the flour. throw in some chopped garlic to brown for a minute or two then add some chicken stock to make a nice braising liquid. toss the chicken back in the pan, cover and bring to a simmer. cook the chicken at a low simmer for 45 mins to an hour. (depending on the size of the thighs) serve with rice or potatoes or even some mashed fauxtatoes made with steamed cauliflower(a decent option for the low carb set). the chicken will be tender and flavorful. the gravy-sauce kicks butt too. i had nearly the same thing for dinner friday except mine invovled some bacon and a cup of red wine. i had it with rice pilaf and peas.
