Nice knives. I'm sure the place esvoboda is talking about in SF Chinatown is the same place I'm thinking of. I bought some cookbooks and mini-bamboo steamer there. No junk.

Geez, what a beautiful handle. I'm positively emerald with envy. What did it cost you, if you don't mind me asking.

I ran across this site, already. Some nice knives, though I notice they're not exactly giving them away. ;)

I also notice your icon is a Chinese knife. What a coincidence. Seems I'm talking to just the right person. So, are the CCK knives what you would recommend in the sub fifty dollar catagory?

I'm trying to get my pics of my C knife to you, but am having probs downloading to my 'puter. So, I'll describe:

blade: 6-3/4"L x 3-1/2"W weight: 12.3oz thickness at spine: 0.092"

The finish is similar to the SCC-01 on the JapChefKnife page, though I'm sure it's just cosmetic, not really Japanese sharpening marks. There are Asian characters acid or laser etched onto the shiny polished upper section. I have no idea if they are Chinese, Japanese, etc. It does show an icon of a World globe with a banner around it with the single word FEIQIU on the banner. Not much on the net except a Chinese lathe company. I'm real happy with it, but, like I said, I feel it's just a tad heavy. I want to try a blade just a bit thinner. What is the usual thickness of a no. 3 Chinese knife?

Oh pshaw, on Thu 08 Jun 2006 06:47:03p, Jen meant to say... Did you have the flan case lined with pastry? This is a must for any loose-bottomed pan. If you...
