I'm sorry if I was coming across as a jerk, which was not my intention. I have strong feelings about Cincinnati chili, which probably comes across as rather strange to some...

Cincinnati chili ... its either like it or loathe it. I think alot of people make more out it than they should. If served to them with out clbuttifying it as "Cincinnati chili" in just a bowl/cup like regular chili most probably wouldn't know the difference till tasting and if not told it had cinnamon and cocoa in it just spices probably would scarff it down in pot full. I think the spaghetti bit is the bigger turn off than the spices.

Texas chili same thing. I have to admit that I kinda agree with the Texans chili shouldn't have beans, and for the longest time I picked the beans out of any chili served me. I've grown to deal with it, but thats the only time I eat beans, other wise, yuck.

I'm a fan of America's Test Kitchen (a.k.a. Cook's Illustrated) and I subscribe. However, they are not...

I may be biased some what as a native OH'n and some one who has lived in the Queens City area but...

I may like Cincinnati chili BUT I am NOT into all this x Way. One you can keep the stupid spaghetti! Thank you very much. Onions, some cheese, and depending on the mood du jour (which basically is how mad at the universe am I today) sour cream. If I have the sour cream I skip the crackers. YES HEARSAY I put crackers in my chili. I prefer those oyster crackers the best, but saltines will suffice, and no don't even bother to bring me any of those unsalted atrocities. This goes for any chili Cincinnati chili or otherwise. Same with chili dogs, cheese, onions, mustard, chili. You can keep all that goop thats on those Chicago style hot dogs, I don't want a salad on my hot dog! For that I have a cole slaw on my hamburger : ) I know I was not keen on it either till I tried it. I love it. Was a place in Pgh. that sold these, I am not sure of the origin(s), but it was great, this has nothing to do with Primanti Brothers for those familiar with them.

As for boiling the meat that rates right up there with boiling ribs, ABSOLUTE SIN! Not going to happen. Maybe I don't get the fine little minced up meat, but thats fine with me I would rather it be a little chunkier and have some flavor rather than boiling all the flavor of the meat away.

I am fortunate that in FL there are two Skyline locations near me, that I really need to go check out. Seems to be on my proverbial "to do" list and never reaches that far down. Plus an upcoming business trip will take me to OH and time to pig out on the White Castle, OH "veal" sandwiches, and Timbits (YO! Stupid Wendys bad move for selling off TIMS! So US Tim Lovers enjoy it while they last, as Tims in the US is coming to a close! Oh, but Wendys is not going to be around much longer anyway either...Stupid investors and idiot management! So better eat your Doubles & Triples while they are still around! Dave Thomas you are truly missed!)
