Sorry if I get too "technical" here ;), but I have just dug out another tin of our coconut "cream". Had a look at the label and all it says is:

Brand = Sunkist. Ingredients: Coconut milk, Water, Polysorbate 60, Guar Gum, Sodium Metabisulphite. Choice Grade. Imported. Product of Thailand.

To try to answer your question: When we open these tins of "cream", usually about half of it has the consistency of "sour cream" and the rest is liquid. I suspect that most of this is the "water" they are bragging about on the label! However, we only used one tin (400ml) for this recipe. I used the cream part as instructed and then just added the rest of the "milk" when I put in the prawns.... worked out fine.

Thing is, we get several brands over here, but we buy this one if we can get it, which is purely personal choice. I find that in general, the recipes I have come across tend to use a lot more coconut milk that we like or need. Just experiment = experience, and again, personal choice. Although curries are always nice with it though!
