Well, what I ended up with was WAY too tangy!
--- Andy's 1st Cucumber and Onion salad.
2 English cucumbers sliced paper thin 1 medium red onion sliced into paper thin rings kosher salt
Marinade 1 cup rice vinegar 1/2 cup water 1 tbsp sugar
Combined cucumbers and onions and sprinkled liberally with salt and let drain in salad spinner for 30 minutes. Drained and quick rinsed then salad spun thoroughly. Meanwhile brought the marinade to a boil and let cool, then combined the two in the salad spinner bowl, covered and refrigerated for 3 hours. ---
I couldn't eat near the same amount that the Amish offer. Way too much tang of vinegar. It didn't even resemble theirs visually.

I suppose some sour cream would have mild'd it down some, or more sugar.
Another issue was slicing the onion into such thin rings, they all kinda/sorta clumped together. Next batch, I'll cut the onion in half before slicing. Maybe keep them separate from the draining cucumbers and then combine.
Verged on sucking lemons. Think I'll spread it around the yard and see if the foxes and rabbits want some. --JUST KIDDING--
