Stepping Up to the Plate 3522Well, my husband occasionally calls at the last minute and says he's bringing home a friend, but: a. it's always the same friend, who has been to our house a million times, and who normally...
I can see it happening, especially around this household. Steven always has something going on and 13 oz of roast beef is too much for me to eat (except for corned beef ;). I like roast beef sandwiches but not continuously until the beef is consumed. We eat out a lot. Usually on the spur of the moment. When I clean the fridge out I can't believe all of the spoiled food I find.
Stepping Up to the PlateI'm already pouring my pre-dinner libation when, "Oh, I forgot to mention that So-and-So is dropping by for dinner." "I hope she's not expecting anything special, it's...
Ob Food:
Grilled hamburgers last night. I did not grind my own meat last night, I did not have the time. I bought some ground round (shaddup Sheldon ;) at Straubs. I was in a weird mood so I added about 2 tablespoons of water to the meat, 3-4 shakes of dehydrated onion and a few glops of Worcestershire sauce. Made the patties and put them on the grill. I made french fries for Steven and California Mashers for myself (mashed cauliflower). I had some fresh spinach on hand and made a salad with chopped egg, crumbled bacon bits and red onion. I made a quicky warm dressing to put on the salad. This is the recipe I used and I got it off of Google. Naturally I measured nothing and made some adjustments ;) The salad was delicious. Dessert was fresh strawberries with whipped cream on the side.

Wilted Spinach Salad From Diana Rattray,
The heated bacon dressing wilts the spinach leaves and gives this salad a wonderfully delicate flavor.
INGREDIENTS:
10 to 12 ounces fresh spinach, washed and torn into bit-size pieces 1-4 cup minced red onion 5 to 6 radishes, thinly sliced (I omitted the radish. The SO does not like them) 2 hard-cooked eggs, 1 chopped, 1 sliced 2 to 4 slices bacon 1 to 1 1-2 tablespoons bacon drippings 1 1-2 tbsp. sugar 3 tbsp. vinegar 1 tbsp. water 1-2 tsp. salt 1-8 tsp. pepper
*NOTE- I subsbreastuted rice wine vinegar for the vinegar and I added a bit of soy sauce, maybe a tbsp.
Stepping Up to the Plate 3521The closest I ever came to this was being invited at the last minute to a party where everyone brought something. I had a reputation to uphold, as I always...
PREPARATION:
Place prepared spinach in a large bowl. Add onions and radishes. Refrigerate, tightly covered. Fry or microwave bacon until crisp; remove to paper towel and set aside. In a small jar or measuring cup combine drippings with sugar, vinegar, water, salt and pepper. Refrigerate all ingredients until just before serving. When ready to serve, microwave the dressing (I warmed it on the stove in a saucepan) on HIGH for 30 to 45 seconds, or until mixture boils. Toss the chopped egg with the greens then pour the hot dressing over greens mixture; toss again lightly. Top with sliced egg and crumbled bacon. Serves 6.
