Sounds excellent Wayne. We worked all day long in the garden and on the yard. We were so tired we canceled our dinner reservations and made pork chops. I have a recipe for the following somewhere but can't find it due to recipe book purge time ;) So... as usual I winged it.

8 1-2 inch thick pork chops Several potatoes sliced 1 large onion sliced thin Butter Kosher salt Fresh ground pepper Sprigs of fresh rosemary from the garden

Rinse and pat chops dry. Butter bottom and sides of cbutterole dish large enough for the ingredients. Clean and slice potatoes. Peel potatoes before slicing if desired (I didn't). Layer bottom of cbutterole dish with potatoes, a layer of onions on top of potatoes and chops on top of onion layer. Sprinkle with S&P and lay a whole sprig or 2 or 4 of the fresh rosemary on top. Repeat layering and sprinkle more S&P on top and a couple more sprigs of rosemary. Dot top sparingly with more butter. Pop in the oven and bake for 45 minutes to 1 hour. For the life of me I can't remember if I covered the dish or not.

It was pretty tasty and we had a bagged spinach salad to go with and some dilled carrots. It was another fly by the seat of my pants meal. BTW Wayne, I tried to email you and it bounced. Can you resend me your email addy? Thanks.
