For dinner last night I decided to do something a bit different - my family tends to like the same 10 things over and over and over and over and...well you get the picture :)
So I dug around online and found this recipe
Crab Bisque Serving size: 5
2 Tb butter
1 tsp Onion, finely chopped (didn't seem like much, I love onion I am sure I added more)
1 Tb Parsley, finely chopped
1 1-2 cup crab meat, chopped
2 TB flour
2 cup chicken broth (I tried the chicken "base" - seemed pretty good not too salty)
2 cup light cream
pinch cayenne pepper
salt
In a saucepan, melt the butter. Add the onion and cook slowly until golden. Add the crab meat and parsley and cook over low heat stirring constantly (about 4 minutes) Add the flour, stir to blend and cook for 3 minutes more. Stir in the chicken broth and simmer gently for 20 minutes. KEEP PAN PARTIALLY COVERED. Add the cream and cayenne pepper. Heat and add salt to taste. Makes 5 cups

It was very good - I served it with a loaf of homemade wheat bread. My husband LOVED it. I thought it could be a little thicker - but I've honestly never had bisque - maybe it isn't supposed to be a thick as I think it should.
Next time I will try to get it a little thicker (more flour? less broth?) and I will make another loaf of bread
