Proper beer? There are very few beers that are meant to be cellared and aged, and even those have limited shelf life. The vast majority of beers are ready for consumption immediately upon being bottled, the fresher the better. Most beers do not keep well. Some beers have preservatives in them to extend their shelf life.

And you can stick your lamebutt insult about me only drinking Bud Light up your butt and that head of yours up there a drink. Bud light is not much worse than any other American beer, most of which are like making love in a canoe.... f***ing near water.

Oh we have been talking about proper confit prep. It's just that you have this thing about how it absolutely *must* be aged, and while you got one person to cite one source for that, I have found numerous recipes for it that make no such claim. I have had duck confit many times. I don't think I could tell if it had been sufficiently aged, and I doubt that you could either.

I thought that is what I was doing :-)
