Erbsensuppe mit Bockwurst Pea Soup Sender: Hexe


While making supper last night, pea soup after the discussion, I thought to look up Erbsensuppe to see how the Germans do it as it is just about northern Germany's national dish. I've never had Erbsensuppe and was curious, now I know why they sell it in plastic rolls much like bulk sausage, potatoes. Has to be a seriously THICK soup.

and because I'm such a nice person, i'll translate.

Erbsensuppe mit Bockwurst "Das Kochbuch"

Please soak peas overnight.

500g yellow shelled dried peas 150g carrots 1 thin leek 500g potatoes pepper 1 tsp dried marjoram 500g (approx. 10) Bockwurst

Soak the peas overnight in 1 1-2 liters water.

The next day drain water and replace it with fresh, cook for about 45 minutes. Purree half of the peas.

Peel carrots and finely dice. Peel potatoes and cut into 1-2 inch cubes. Slice leek. Put all three ingredients into 300ml water, cook until soft, add cooked peas.

Season with pepper and marjoram. Slice bockwurst and add to soup to heat. Add salt to taste.
