Fiery Hot Country Style Ribs

4 pounds country-stile pork ribs = (or beef short ribs) 1 small onion; chopped 1 garlic clove; minced 1 tablespoon cooking oil 1 1/2 cups tomato sauce 1/3 cup vinegar 1/4 cup sugar-free maple syrup 1 tablespoon bottled hot pepper sauce 2 teaspoons ground cayenne pepper 1 teaspoon chili powder 1/2 teaspoon salt 1/2 teaspoon dry mustard
In a large saucepan or dutch oven cook ribs, covered, in enough boiling salted water to cover for 45 to 60 minutes or until ribs are tender, drain well.
Sauce: In a medium saucepan cook onion, and garlic in hot cooking oil until the onion is tender but not brown. Stir in tomato sauce, vinegar, syrup, hot pepper sauce, cayenne pepper, chili powder, salt and dry mustard. Bring the mixture to boiling, reduce heat and simemr, uncovered for 25 minutes, stirring occasionally.
Gril ribs over slow coals for 45 minutes, turning every 5 minutes. Brush with sauce frequently. If desired, heat any remaining sauce and serve with the ribs.
