That's pretty cool. I used to keep track of everything I eat, for about 1.5 years, during a weight loss diet and then for some time after that, to learn good habits for maintenance. Once I felt my habits were in place, I stopped keeping track. I do still keep close track of my weight, but I have become more flexible re exact amounts of foods.
When it looks like I am getting off track too much for a while, I go back to keeping a closer eye on things. Saturated fats always seemed to be the easiest thing to have too much of. Especially because when eating away from home, eating meals prepared by others, they always seem to be much higher n fat than my own - and especially high in sat fats.
Like you, I exercise regularly. I find maintaining hard work. But I hardly have any colds and flus anymore ( 1 cold in 2 years rather than the usual 6, no flus).
My tastes ahcve also changed during this period, Lots of foods taste loud and cheap to me now, such as factory cookies and chips. And bottled sauces. Candy. I simply don't desire them anymore.
