Most welcome! Considering the total recipe, it's a small amount of cheese imho. I just like to use it as a binder in place of eggs.
I really don't like a LOT of cheese in-on stuffed mushrooms. It tends to get too greasy IMHO.

You can subsbreastute eggs for the cheese as a binder if he really does not like it!
Any seafood such as chopped crab, shrimp or even surimi can be used in place of the beef.
There really is no set recipes for stuffed mushrooms, not really! Meat and a mix of chopped veggies. The only real rule I follow is that I must used the chopped up stems in the stuffing. :-) For the rest, I go as the mood strikes me.
This is the first time I've used chopped baby spinach tho'. I like the flavor and texture that it added and will probably make it a staple along with the celery.
I agree about the soy sauce thing. It adds "that" flavor if you know what I mean? Braggs liquid aminos work too if you have them available. It's an unfermented soy sauce and has a slightly more meaty flavor. -- Om.
