I've never made like this. I copy the recipe!

I like to use calamari for pasta sauce and ciuppin.

I like calamari filled with calamari (Gnam Gnam) and baked with some white wine; or fried.

I've never had this problem. If I have to make a salad, I cut Octopus in pieces, then I boil it and I let it cool in the same water. You must put salt at the end (about 15 minutes before it's ready) because salt make the mollusk hard when boiled. When cool I take away the skin and I season it with lemon, oil , pepper , parsley and garlic. If I have to make a tomato sauce, I generally use pressure cooking (you save time and Octopus come out very tender in only 20 minutes): I put pieces of octopus in the pan, with oil and garlic; mix for 2 minutes then evaporate with white wine. Then I put some fresh tomato sauce, salt and pepper; I close the pan and wait about 20 minutes for a big Octopus. Cheers Pandora
