I invented this recipe last month when I felt like baking and we didn't have a lot of obvious ingredients in the cupboard - but we did have an overripe banana and a bar of chocolate that I wanted to use in cooking! They came out very moist and yummy, and I'm making another batch as I type, so I wrote down the recipe for future reference.
Karen's Fruit Salad muffins

1 single-serve container applesauce 1 very ripe banana 1-4 to 1-2 cup raisins 1 bar 70% cocoa dark chocolate, broken into chips (or 1-2 cup chocolate chips) 1-2 cup unsalted butter 1 cup brown sugar, loosely packed 2 eggs 2 teaspoons baking powder 2 cups flour apple juice or orange juice (approx 1-2 cup) sprinkle apple pie spice or cinnamon vanilla
Melt the butter in a large microwave-safe mixing bowl (or on the stove top). Mix in the sugar. Mash the banana and add it to the bowl, then beat in the eggs and vanilla. Stir in apple sauce, baking powder and spice. Gradually add flour and fruit juice to the batter, mixing well. It should be a smooth easily-spoonable batter, but not too runny. Lastly, stir in the raisins and chocolate chips. Spoon the batter into muffin cups and bake at 350F until the muffins are brown on top and a skewer comes out clean.
