Are you talking about the coconut you buy at the supermarket? If so, look carefully at the 3 "eyes." One will look different. It will stand out more. That's the one you want. It is softer than the others. Poke it with a carrot peeler (or screwdriver, but it shouldn't be hard). Drain the liquid into a glbutt. Strain it, and refrigerate so it will be ready to drink when you're done with the rest of the coconut. (Growing up in Miami, we called this liquid the milk, but that turns out not to be the term used everywhere else. It is the coconut water. Milk is something else.)
Now go outside to the sidewalk. No sense dulling your knife. Hit the coconut on the sidewalk until it cracks (3x is all it should take). Remove white coconut meat from hard outer shell. There's a thin edible brown papery shell well attached to the meat. You eat that.
I've also heard of baking the coconut to force a separation from the shell, but honestly, I prefer the sidewalk method.
If you already live in coconut growing territory (oddly, not Miami anymore), your coconut might come with the big outer husk on it. You have to peel that away without breaking the inner coconut. You'll know when you break the inner coconut because the water drips out meaning that 5 kids have to pbutt the coconut around holding the drips to their mouth in order to get the good stuff before it spills. To peel off the outer husk, you need a big kid with a machete or sharp implement. Once you've got it started, the peeling is relatively easy.
