With greatest respect, Mathew was written before Luke. Mathew was almost certainly written in Hebrew as he was a Jewish tax collector.
Luke was a Greek doctor and scholar and his gospel is thought to be written before A.D 62 as it does not mention Nero's persecution of the Christians in A.D. 64 or the rests of James in AD 62. It was likely to have been written in Hellenistic Greek as he was a gentile. Luke's Gospel, and Acts can be crossed referenced with The O-T, even though Luke was not a Jew.
The Gospels are individual books which have only been 'collated' by the church. This in itself is a testament to their accuracy as people didn't have telephones, Internet and so forth in which to compare scrolls of different languages from hundreds of miles apart.

Luke makes a point of saying that many people had set down to keep orderly notes about Jesus. He felt it important that he too kept record (doctor habit I suspect). So he will have known that if he told untruths the other records will have contradicted him harshly.
"Since many have undertaken to set down an orderly account of the events that have been fulfilled among us, just as they were handed on to us by those who from the beginning were eyewitnesses and servants of the word, I too decided, after investigating everything carefully from the very first, to write an orderly account for you, most excellent Theophilus" (Luke 1:1-3).
Even the Dead Sea Scrolls speak of the great teacher.
