MUSTARD SAUCE 1-2 cup liquid in which corned beef was cooked 1-2 cup white vinegar 1 tbsp dry English mustard 1 tbsp sugar 1 egg
Mix egg, mustard and sugar in small saucepan. Add liquid and heat *very* gently, stirring constantly, until mixture thickens. If you heat it too quickly the egg will scramble.
This is a very old traditional recipe. It is so old that it was dropped from the Centenary edition of the PWMU Cookbook, though I bet it was in every other edition starting with 1904! I made sure to copy it out of my old book, which was falling to bits. The PWMU (Presbyterian Women's Missionary Union) Cookbook I'm sure has equivalents everywhere, published by the Country Women's buttociation or the Women's Insbreastute or the Mother's Union or whatever. Small and spirax bound, it contains recipes for all the basic family dishes, starting with advice on how to boil eggs, and has a chapter up the back on how to get stains out of things . If I had to cut down to just one cookbook ths would be it, even ahead of The Cook's Companion (the divine Stephanie doesn't give any advice on stain removal).
