This recipe reminded me of the following. It was the tapioca and cooking method that made the connection for me.

Barney's Blarney Beef Stew Serves 4-6

1.5 lbs chuck roast, cut into bite-size chunks 1 cup celery, cut into chunks 4 carrots, chunked 2-3 medium potatoes, cut into chunks 1 onion, sliced 1-2 cup fresh bread crumbs 1 large (20 ounce) can tomatoes 1 Tbsp salt 2 Tbsp sugar 3 Tbsp minute tapioca 3 generous splashes Worcestershire sauce Dash oregano (optional)

In a baking dish with a tight fitting lid combine all the ingredients. Do not brown the meat. Cover. Bake in a 250 F oven for 5-6 hours. Don't hurry the stew, as the long cooking time and slow oven are the key to its success.

Dean G. " la Nioise" means nothing and everything, means whatever the particular cook wants it to mean but only within certain very basic parameters, same as Irish Stew means whatever the particular cook...

I have done many variations on this, even using left overs and adjusting liquids accordingly. It was great one year when I had a bad spell over the holidays to help use up the left over turkey on Boxing Day and basically give me the day off to rest.
