Yes. I was. And any restaurateur who isn't fails quickly. Foodservice is a difficult business where there are whole legions of customers like you who pretend to know things.

My restaurants set standards for scratch-cooked foods, respectfully prepared and served. We used local ingredients unless we absolutely couldn't get the best quality locally. I hired trained kitchen people and trained hundreds more. You haven't the remotest idea how real restaurants operate. You only think you do.
