Sour Cream and Salsa

Salsa has become so popular in the US, it has recently overtaken ketchup in overall sales. And why not. Is not ketchup really just an over-pureed over-processed salsa? Salsa goes good on anything ketchup works on, and usually better. Last night I had breakfast burritos with salsa for dinner. Yum!

3/4 C diced Spam 1-1/2 C pototoes O'Brien (frzn) 1 bunch green onions diced 3 med flour tortillas oil Salsa of choice

Saute Spam in hot skillet with oil till browned then add onions to saute for a couple mins. Remove and set aside. Repeat for potatoes OB, frying till nicely browned. Add Spam/onions back to patatoes and combined. Reduced heat to med and add beaten eggs. Fry till eggs are scrambled and set. Fill toasted flour tortilla with egg mixture and top with salsa and roll burrito style. Sour cream and cheese optional.

They are just baby chicken, with almost exactly the same taste as the barely mature "adult" chicken sold in supermarkets nowadays...

Breakfast burritos are pretty common in many parts of the West and Southwest. So much so, many well known Burger chains offer a variation on their breakfast menu. You can do just about anything you like with these using anything from bacon to sausage or beef to frijoles (beans) or whatever comes to mind. Typically, If it can be eaten off a plate for breakfast, it can rolled in a tortilla. I'll pbutt on the grits.

The other great Mexican breakfast clbuttic, as Kili mentions, is Heuvos Rancheros, which is typically a combination of beans, eggs, and salsa. My favorite way to eat HR is to heat up a some refritos (refried beans), top them with a couple fried eggs (over easy) and top all with warm salsa. I then cut up the eggs and mix in the runny yolks, then use a toasted flour tortilla as a spoon and enjoy it with an ice cold cerveza (beer). Double yum! Using nuked canned beans and salsa, a very quick, yet hearty, breakfast.

If I hadn't used up my last eggs for burritos last night, I'd be making some HR right now. ;)
