Here's the recipe that I posted recently. They are decorated with colored sugar and very easy to make, but they are not cut out cookies. These cookies are very tender and light, crispy. Makes a lot. Everyone that tries them wants the recipe. The recipe get cycled for the season -- red for Valentine's day, green for St. Patrick's day, and plain sugar for Just Because Day, etc. Sugar Cookies 1 cup powdered sugar 1 cup white sugar 1 cup margarine 1 cup vegetable oil 2 eggs 4 cups flour plus 4 tablespoons rounded 1 teaspoon soda 1 teaspoon salt 1 teaspoon vanilla Cream shortening and sugar. Add eggs, vanilla and dry ingredients. Drop by teaspoonful on a cookie sheet and flatten with a drinking glbutt dipped in sugar. (For the holidays, I dip a glbutt in red sugar and another in green sugar.) Bake at 350F. (I never did put a time down for these cookies. Maybe 10 minutes. You want to bake until when you touch the top of a cookie, it feels as though there is a slight skin on the cookie. The cookie will still feel soft and sort of puffy. You don't want these cookies to brown--just lightly gold.) After I remove the cookies from the oven, I allow them to cool and harden on the hot cookie sheet. Janet
