The Best Laid Plans

At the last minute, we had to scratch our plans for a Christmas dinner out. Our new puppy appeared to be quite ill and we had to get him to an emergency vet pronto. Turns out that he has a blood infection which they are treating intravenously for the next couple of days. He will be fine.

Meanwhile, we got back home nearly 3 hours past our dinner reservation time and not in the happiest of moods. A well-spiked eggnog turned us around, and I started scrounging the kitchen for the makings of an impromptu Christmas dinner.

Luck would have it that our neighbor brought us about 3 pounds of their spiral-sliced ham yesterday, as the whole ham was far too much for them. I found a couple of nice red garnet sweet potatoes and some green beans I had bought to use early in the coming week. I also remembered that I had a container of cranberry chutney in the freezer.

We ended up with the ham, slightly warmed, baked yams with butter, green beans with dill and onion in sour cream, and the chutney. It was a very tasty meal for the two of us and practically no work at all. We have Christmas cookies and fudge for dessert later.
