Tonight's Soup

I usually make this with chicken but I've got some frozen turkey thawing. I'm using all white meat turkey chunks in this and I'm sure it will be fine. I usually use a mix of white and dark meat chicken. It's pretty high in fat, carbs and cholesterol but I use the 98% fat free canned broth to reduce the fat content. The carbs are mainly from the beans and corn which are still carbs but not so bad. The tortilla chips are high in everything ;( I got this recipe from one of my cooking clbuttes at Dierbergs. I have adapted it many ways but this is the basic. My adaptations include subsbreastuting chicken for turkey.

Turkey(Chicken) Tortilla Soup

1 tablespoon vegetable oil 1 small onion, chopped 2 cloves garlic, minced 3 to 4 cups diced cooked turkey 1 box (32 ounces) chicken broth 2 cups frozen corn kernels 1 can (14.5 ounces) diced tomatoes and green chiles 1 can (15 ounces) black beans, rinsed and drained 1 teaspoon ground cumin Tortilla chips Garnishes Shredded Mexican cheese blend, diced avocado, sour cream, lime wedges, chopped fresh cilantro In large saucepan, cook onion and garlic in oil over medium-high heat until tender, about 3 minutes. Add remaining ingredients except tortilla chips and garnishes; bring to a boil. Reduce heat and simmer for 10 to 15 minutes. Ladle into bowls. Top with broken tortilla chips, and garnish as desired.
