tacos are good too. some will argue that "true" tripas are the stomach lining of the cow, and some will argue that it of the pig...in either case they BOTH are yummy. however i would not cook it like a piece of meat ie. steak, chop roast etc...usually they go in soups and various forms of tacos.
which is why they say that menudo is good for a hangover. tripas is a natural form of pectin which absorbs alcohol. when i was growing up we had menudo and Barbacoa every weekend. no barbacoa it is NOT Mexican BBQ. it is basically cabeza. our neighbors would take the head of the cow and bury it wrapped in banana leaves on coals, sorta luau style after a few hours, a few tecates and a few shots of mescal it was ready. the brains, eyes, tounge EVERYTHING went into making the dish....and i must say that it is quite rich.
my mother LOVED the tacos (which is the normal way to eat it) until we told her what it is...she never touched it again. hahahahaha
