I posted this to an earlier inquiry, but will post it again because it uses Lots (aka bunch) of blueberries. Fresh berries work just as well as frozen in this recipe.

LOTS OF BLUEBERRIES COFFEE CAKE

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons unsalted butter 2 cups all-purpose flour 2 1-2 teaspoons baking powder 1-2 teaspoon salt 3-4 cup skim milk 2-3 cup Splenda -- or sugar 1-2 cup Egg Beaters¨ 99% egg subsbreastute -- or 2 large eggs 3 cups frozen blueberries TOPPING: 2 tablespoons sugar 1-4 teaspoon nutmeg
Heat oven to 350 degrees. Grease 8 or 9-inch square glbutt or nonstick baking dish (not uncoated metal). Melt butter or margarine in saucepan; let cool. Mix flour, baking powder and salt in large bowl. Whisk milk, sugar and eggs into butter; stir into flour mixture. Stir in blueberries. Spread batter in pan, sprinkle with sugar mixture. Bake 55-60 minutes until pick inserted in center comes clean. Cool in pan 30 minutes before serving.
