'Sicilian Cauliflower' from a Waitrose recipe card. It's extremely easy and really, really, really good. Nice hot or cold as a meal with bread and a light salad, or as a side dish with sausages, or ham.
----------------------------- 1 large cauliflower 190ml vegetable stock (use a cube or powder) 75ml olive oil 25g sultanas 3 cloves garlic, peeled and sliced 3 tbsp Capers without their brine 25g pine nuts, toasted 20g parsley finely chopped fresh lemon juice to taste (c. 1-2 lemon or more)
Preheat oven to 200C. Remove leaves from cauliflower and cut into 2cm thick slices, layer in a baking dish, pour on the stock and 1 tbsp olive oil. Cover and bake for 35-40 minutes or until tender. Remove foil after 20 minutes.
Pour boiling water over the sultanas, leave to soak for 5-10 minutes, then drain.
Warm the olive oil in a pan with the garlic, remove from heat and allow to infuse for 5 minutes or so. Remove and discard the garlic, then stir in the capers, pine nuts, sultanas and parsley.
Drain the cauliflower and discard the liquid. Spoon the dressing over it, season and sprinkle with lemon juice to taste. ----------------------------
