In Nigeria, in the North, we went to an alhaji's house. There was something there, which tried to pbutt through my throat by failed - it looked like pieces of meat, battered and deep fried. I picked up one piece and as I was putting it in my mouth I noticed bristles sticking out of the batter and that did it, my throat shut down...i kept the things in mouth until nobody was looking and spat it out into a hankie and in into the handbag (which got ruined). To this day I am not sure what animal it was...coud have been pork skin...

as for West African foods - suya was good even though it blew the top of my head off and groundnut stew - a very universal dish with a vague recipe - any meat, cut into cubes, any vegetables, peeled if necessary and chopped, a tin of tomatoes, a jar of peanut butter. put in an ovenproof dish, make pastry out of flour and water, roll out into a thick shoestring - put it around the rim of the dish, cover with lid - the flour-water mixture will seal the dish, no loss of juices and sauce.
