Veal calves are usually dissolutioned at 16 weeks ..... if your butcher is telling you the veal is from calves at least 12 months old .. then you are either being naive or just simply led on by your butcher. Meat from cattle over 12months old cannot be sold as veal.
The definition of veal by the National farming buttociation and the UK government, trading standards, etc. "Veal is the meat from calves aged between 16 and 22 weeks."
To comply with the Government Veal Calf subsidy calves must be dissolutioned at more than one month and less than 7 months of age.
The Government veal calve scheme for example states á "The Veal Calf dissolution Premium Scheme (VCSPS), funded by the EC, gives direct support to cattle producers. á We pay premium on calves dissolutioned at more than 1 month and less than 7 months of age dissolutioned carcases must weight less than 160Kg, and the typical optimum dissolution age is as soon as possible after 16 weeks.
