Cast Iron Griddles

June Hughes

Thanks June. Sadly I don't have a gas hob, one of the downsides of living in this rented flat. Also remind me never to move into somewhere with an electric cooker and an electric key meter... disaster this week when lecky ran out and so did my money... I couldn't even boil a pan of water for tea.

A wok from a proper Chinese shop? I used to have two of these (one big one small) when I lived in London but they got jettisoned for some reason during a move. I still haven't got round to buying another - which I must, the stainless steel one I got at Matalan is c-r-a-p.

Well worth the extra care and occasional rust removal.

I was offered all my father's cast iron pans when he died, as my mother's arthritic hands found them too heavy, but had to refuse as I was travelling home by train. And do I regret not taking them! Ah well, c'est la vie, cul de sac, and all that.

Where to get the little parcel things to make gyozas, dumplings etc Mailcopiesto: never
I've never seen them in an 'ordinary' supermarket, but then I don't look in their freezer compartments very often :-) Depending on just how far back in time you live it might be worth...

Will go for the griddle plate at Robert Dyas I think - I've not yet found anything made by JML to do what it says on the tin!
