I tried the crumble suggestions and what made the difference was working the butter into the flour more and also using a higher proportion of butter and a little less sugar. So the mix becomes much coarser.
I used 8 oz. flour, 6 oz. butter, 3 oz. golden caster sugar.

I just read somewhere that the mix is used straight out of the freezer in one recipe, so I will try that next.
