Quite a lot if you have over 200 people a day wasting it. And I don't think the sort of butter we want to serve is made in large commercial blocks.
That's a big of an exaggerated take on what I wrote and my reason for asking about wrapped butter pats. No customer goes away from here feeling they are 'just a number'. There are all sorts of unhygienic practices that could be involved in not using wrapped butter and *every* establishment has to think about wastage. Many keep a wastage book. But please don't worry that our customers are given measly portions of anything. We wouldn't get the repeat business we do, going back years, if that were the case. Nobody who has ever been here could say we're mean with their food, I promise you! People are given several pats of butter and they are welcome to more if they ask for it. We really do not adhere to some awful "only two pats of butter per customer" rule, which is one reason for wanting them to be wrapped.
We don't use those, either. Jam and cream are served in individual dishes. We find there is little wastage with those and so, no worry about hygiene therefore. We use Highfield Preserves strawberry jam both in cooking and for cream teas. Meanness is not part of our service to our customers.
