Hullo, I've always been intrigued by the phrase "eggs over easy" and it's only just now that I've looked up what it is. It seems to be a quick flipping over a fried egg to finish cooking the inner white of the egg that is on the upper side while still leaving the yolk runny. This seemed a bit of a disappointment to me as I have achieved this effect by the easier method of spooning hot oil over the top of the egg while it is cooking. I've always flipped my own eggs, but to hard fry as I'm one of those freaks that doesn't like runny yolks. Am I missing something from the "eggs over easy" experience for my gf (who likes her yolks runny) with the hot oil method or is it just something that people like to show off with (the quick flipping of an egg is a bit of a skill akin to pancake flipping)? BTW while some like the combination of bacon fat and crispy bits with their eggs I'm finding the same combination with fried, sliced new potatoes to be a winning combination right now.
