Not sure what brine is, or whether I can get it in the UK. I buttociate brine with tins of tuna fish, but I'm sure you dont want me to poor the juice out of a can of tunafish on my chicken! Buttermilk I can do, do I cover the chicken in it, and how long should I leave it for?

How long does it take to sieze and how will I know when its done? My wife will tell you otherwise, but I'm not a great cook and despite having tons of recipe books I still dont have much in the way of culinary underderstanding or intuition. Which explains why even meals I prepare often are variable in there quality, which always annoys me.

What sort of heat do you use for this and how long would you expect to cook it for? Also do you turn the chicken often? I find that once the oil is hot I have to put the gas ring on its lowest setting to avoid burning the outside (using the largest ring on the stove). And the chicken always has to go in the oven to finish cooking, but our butcher does do very large breast portions.

I've been to Italy a few times now and have seen how cooking is really done. The result being I avoid anything processed or out of a packet if at all possible. Which makes shopping at Sainsburys very difficult as everything they sell is either made to go in the oven or microwave. And the fruit and veg is useless! And I wouldn't buy there meat or fish either.
