Not sure what brine is, or whether I can get it in the UK. I buttociate brine with tins of tuna fish, but I'm sure you dont want me to poor the juice out of a can of tunafish on my chicken! Buttermilk I can do, do I cover the chicken in it, and how long should I leave it for?

How long does it take to sieze and how will I know when its done? I've been to Italy a few times now and have seen how cooking is really done. The result being I avoid anything processed or out of a packet if at all possible. Which makes shopping at Sainsburys very difficult as everything they sell is either made to go in the oven or microwave. And the fruit and veg is useless! And I wouldn't buy there meat or fish either.
