Things to know; I was born the other side of the pond UK, but now live this side of the pond {Canada, the sunny part. :-) . I tend to switch back and forth using terminology for different cuts of meat got to remember that Dave would be on my case as I am now seemed to be clbutted as a furriner. :-) .

In North America I use this in a general sense as I know there are ex pats reading this group one would use a Pork butt which is the shoulder or in the US Boston Butt.

Now I was always taught that pancetta was made from the belly and Capicola was made from the shoulder as you say; the neck end.

Now I am confused

I should go back to using my by-line; ............. but again what would I know. :o((

I know I am long in the tooth, probably over weight, cannot see further than the end of my nose as I am blind as a bat, thinning out fast on top, taste buds gone, cannot put any thing together to make anything decent.

I should keep quiet and only answer when one is called on ............... nahhhhhhh. It's too much of a fun group where one can learn a whole lot of different things.
