I have done them for the Curry Project and nobody except me : looks at or understands them. When the EHOs inspect them they tick the : box and studiously ignore my comments "they are completely useless" : : they are seen to be done, not done to be seen ;?) there again, according to Napoleon, plans are useless but planning is essential. The fact that someone (knowledgeable) went through the process may have highlighted something which may have been missed otherwise, or it may have put things into perspective. Leaving something out because it wasn't considered is diferent to leaving something out because it wasn't considered important! cheers
All I put in the HACCP forms were things which any sensible cook, or chef would do anyway. If I was running a Food Factory, I might think the forms were worthwhile.
