This is a British recipe I downloaded. I make an American cobbler filling underneath, and use the British crumble recipe on top. It is very popular here in Italy.
175 g plain flour 75 g butter 50 g caster sugar (I zip sugar in the FP for this.)
Rub or FP the butter into the flour until it resembles coarse breadcrumbs. Stir in the sugar. Distribute over the fruit filling, pressing down slightly with your hand to be sure it covers the filling.
Put into a preheated 190¡ C oven (gas mark 5) for 15 minutes. Reduce heat to 180¡ C (gas mark 4) and cook for 45 minutes or until the topping is lightly browned. To be honest, this never really browns for me at all. Juices do well up here and there, the crumble gets very crunchy. Overall it is delicious and served with vanilla gelato, just sends my friends nuts. The US filling differes from the UK filling because it has lemon peel, lemon juice, cinnamon and nutmeg added, and not only the sugar which this UK recipe calls for. It's just tastier and juicier. I find blackberries and apples make the best fillings, but have made peach, cranberry and mixed berry.
