i don't discriminate between mid-week or any day of the week, we have been known to have enriched baked beans on toast for sunday lunch...with a good red, as it was sitting there, wanting to be finished.

But a really quick dish, my childhood favourite is the U-bent sausage - you get them in just about any supermarket - it comes in 3 varoeties - original, garlic and light. Slice it thinly, fry a bit, add some pbuttata-tomato juice-tinned chopped tomato. If you use the last item boil the tomatoes first to make the sauce thicker. add sausage. There shouldn't be too much sauce. just enough to coat the sausage slices plus abit. then add a good handful og grated cheddar, stir until cheese melts. "a good handful" is per one sausage which is a modest serving for 2 people. Eat with bread or mash and green beans.

another quickie is fried chicken livers - really high heat on one side, lower on the other side (WARNING! Liver explodes when fried, no matter waht). in the meantime take yesterdays boiled potatoes, chop them up, add a lot of finely chopped onion, parsley and dill if wabted, add mayonaisse mixed with creme fraiche 1:1, only to bind the potato. You can add a little bit of wholegrain mustard to dressing too.

Mid-week (ie Wednesday) is the one meal that's fixed: home made macaroni&cheese :-) Other quick meals: stir-fry -- if you roast...

When livers are done, add some light soy sauce to the pan, wiggle the livers around a bit in it, add a few dollops of creme fraiche, wiggle some more. Eat with teh potato salad.
