Mid-week (ie Wednesday) is the one meal that's fixed: home made macaroni&cheese :-)
Other quick meals: stir-fry -- if you roast something (chicken, pork, beef), roast one big enough to give you some leftover meat for another meal 2 or 3 days later. Stir fry ginger, onions, savoy cabbage, broccoli, slivered carrots, cashew nuts, add the meat to reheat through, flavour with soy sauce and chili sauce. I don't serve rice with it -- there's sufficient volume of vegetable. If no meat, I use beech-smoked tofu and more cashews or almonds.

Pasta with a quick sauce. Tomato, or spinach with onions, mushrooms and cottage cheese. Or try to find the time to make a big batch of bolognese-equivalent sauce and freeze into servings for almost instant meals when you've less time.
Make a *big* pot of beef stew using shin or some other cheap cut. Serve one, er, serving, then freeze the rest in meal-size portions for later use. Stew is really fast to make.
'Salisbury' steak. Make thick patties of good, *lean* minced beef. Fry i one pan with some sliced onions and mushrooms (make gravy with a stock cube and some cornflour if you like). Serve on mashed potatoes with vegetables.
