I agree.
I don't think you should necessarily buttume that vegetarians and vegans want food which looks and tastes like meat. The results in any case, will always be disastrous.
I also have found that looking for vegan cookbooks or recipes runs the risk of finding some really weird bland recipes which have obviously been written by people who don't actually enjoy food that much, or who imagine they've got all these imaginary allergies. IIWU I'd go through your recipe books and find recipes that just happen to be vegan anyway.
Just for starters though, here's the delicious Spaghetti alla Puttanesca (Whore's Spaghetti). It doesn't have Parmesan on the top, so you could serve it to your vegan friends.

cook for about 10-15 mins and add to the spaghetti. The original recipe includes sugar and anchovies but we never use them. It also suggests adding more salt, but there's plenty of salt in it already imo.
