I try and never stay in those modern soulless places you are talking about, better a pub or somewhere with a bit of character. Lets play favourite hotels
Favourite modern:- What was good was the atbreastude of the staff, "what a laugh, haven't we got a groovy hotel". When we left the security man strode out into the street and stopped the traffic! When we went to bed they had left little squeaky toys on the pillows. I liked the daft names of the facilities "Beltz the Black" (restaurant) "Splash and Crash" (the bar)
Favourite historic (in fact may be oldest) made up of a hollow square with a cross in it to form four courtyards, built in about 900, yes, three digits. We love quietly strolling round the corridors and squares late at night.

This one has the minor benefit of arguably the best restaurant in the world:- I loved the way they brought the tapas menu in an envelope, small point I know. The pool area has those narrow arab style irrigation channels and discrete fountains, there is a canopy over the top with cushions spread about, you feel like Errol Flynn in some old "Sheik of Araby" movie.
Favourite chain:-
