If you like Italian cuisine then Rosario is currently the best in town (if he is still in business; Amsterdam has too many restaurants and the slightest economic downturn usually involves some of the small new ones disappearing at the end of their lease, no matter how good they were).

I haven't been to the new Beddingtons yet, but the old one was marvellous. Be warned that the foodie friends of mine who introduced me to the old one don't like the new one.
I hate Blauw aan de Wal because it occupies the site of my old local (the Cul de Sac, for those with long memories) but I finally went there with someone I wanted to impress (OK, my father-in-law) in July 2005 and it is a fine restaurant, particularly in the summer when you can dine al fresco in a secluded terrace (we used to have drunken barbecues on that terrace, chiz, chiz, but it's all posh now).
I've never had a bad meal at Bordewijk, but I have had some memorable ones. I keep going back there in spite of the awful minimalist decor. The food is just so good.
I don't know the rest of them on that page. Maybe I have a thing about the letter 'B'. Anyway, be advised that you should book well in advance (i.e. weeks, not days) for the restaurants that I have specifically mentioned.
